Harvest of local grapes

The grape must is slowly cooked over direct heat in open boilers, until its volume is reduced by half. Even in this case, haste is not necessary: the fire is cheerful but never too strong because the must has to simmer patiently for over 36 hours, absorbing that unmistakable aroma and flavor which, after a long period of aging in wooden barrels, will make our precious bottle of Balsamic Vinegar unique and special. This is how the long journey of the must begins through the different phases that will lead it to become, after a minimum of twelve years, into “Affinato” Traditional Balsamic Vinegar of Modena PDO and, after a minimum of 25 years, into “Extravecchio” PDO.
Aging in casks
Tradition dictates that the cooked grape must is aged in barrels made of noble woods such as oak, chestnut, cherry, juniper, ash, mulberry and acacia, whose typical features provide the balsamic with various shades of color and precious aromatic notes. The aging has always taken place in the attics, where the strong temperature variations between hot summers and harsh winters contribute to the authentic transformation of the product.
